From the pre-colonial times and up to this modern world, various innovative and delicious Filipino delicacies have been created and passed on from generation to generation, and one of which is bagoong. Bagoong is a shrimp or fish paste that was created from the fermentation of shrimp, fish, and salt. Lasting from a few weeks to even a few months, this process enhances the bagoong’s flavour and gives it that umami taste that Filipinos love so much. Used as a standard condiment in the Philippines, bagoong is often paired with or infused into various Filipino delicacies like Pork Binagoongan, and Crispy Bagnet.
